I bought some pita bread at the store last week to enjoy with some homemade hummus but once the hummus was gone I started thinking of the many possible fillings I could use for different sandwiches. Broccoli casserole has always been a favorite comfort food and since I had all of the ingredients on hand I thought I’d try it out. The finished product was how I expected – delicious! Can’t wait to try some other pita sandwich ideas – more recipes to come soon!
Broccoli Casserole Pita Sandwiches
Makes 4 pitas
Ingredients
- 2 cups cooked brown rice
- 2 cups chopped broccoli
- 1 can of cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 small white onion chopped
- 1/2 cup vegetable broth (more or less as needed for a creamy consistency)
- 2 whole wheat pitas cut in half
- 1 garlic clove minced
- 1 Tbsp. vegetarian worcestershire sauce
- salt and pepper to taste
Prepare the brown rice according to the instructions on the package, and add in the onions and garlic with the rice. (You can use vegetable broth instead of water for more flavor). While the rice is cooking, steam the broccoli to desired softness.
In a small saucepan combine the mushroom soup, vegetable broth, cheese and worcestershire sauce over medium heat and stir until the cheese is melted and the mixture is bubbly. After the rice and broccoli are cooked, transfer to a large bowl and combine with the creamy mixture.
Warm up the pita bread, cut in half and stuff with the broccoli casserole mixture. Enjoy!
Tip!
I like to use a bamboo steamer basket like this to keep the nutrients from draining into the water.
