Hummus is one of the greatest inventions. Ever. Coming from someone who is ridiculously finicky about sauces, and when it comes to anything made with mayo or sour cream almost reaching a “deathly afraid of” status, this is a huge compliment. The lack of any animal byproducts makes this the perfect plant-based addition to sandwiches and wraps or a great dip for veggies and crackers. In fact, the main ingredient chickpeas, otherwise known as the musical fruit, boasts incredible health benefits due to high fiber, protein and micronutrient content. Rich, creamy and satisfying while having a mild enough flavor to adapt to many different styles of cooking, it’s no wonder this is…one of the greatest inventions ever.
Hummus
Serves 4
Ingredients
- 1 can chickpeas (or you can soak or boil your own!)
- 1 clove of garlic
- 2 Tbsp olive oil
- 1 Tbsp tahini
- 1 Tbsp lemon juice
- 1/2 tsp paprika
- salt and pepper to taste
Add all ingredients to a food processor and blend until smooth. Sometimes I will need to add a dash or two more of olive oil or some water to help it thin out a bit. So simple, yet so delicious.
You can blend a variety of other ingredients to make different flavors of hummus. Some of my favorites are roast red bell pepper, cilantro and jalapeno and pesto. Now go get creative!
