After our first day in Positano and trying some of the best vegan Italian food, I was really excited to explore some more restaurants in the town. As would become a daily ritual, we began our day with coffee. I found some soy milk(latte di soia) in the market for use in the villa, but I stuck to ordering espresso whenever we stopped at a cafe.
Our second day in Positano, we walked all the way down to the beach and stopped at a restaurant overlooking the water called Buca di Bacco. I found my new favorite listed on the menu, a sweet and simple pasta with cherry tomato sauce and added an arugula salad to round out the meal, making sure to ask for no formaggio. As I have read online before my trip, waiters tend to look at me funny when I ask if there is cheese in a dish since every ingredient is typically listed for each meal right in the menu. But I still feel the need to double-check. At least I have learned how to ask in Italiano!
After a relaxing and delicious lunch, we explored the town some more and later met the rest of our group back at the villa and worked together to create a meal. Having picked up a large bunch of zucchinis earlier that day, we put together a dish of sauteed zucchini, with cherry tomatoes, cannelini beans, garlic and fresh basil. I roasted some large tomatoes with balsamic vinegar and garlic. Paired with some fresh baked bread and a few olives and carrots, we had created a wonderful vegan Italian meal.
