Yes, it’s true. Ice cream, that is vegan, with only one ingredient. This may sound too good to be true, but it’s not! I remember back to a couple of years ago when a friend of mine told me about this amazing concept. This was well before my vegan days but I had already begun down the road of asking questions which eventually led to cut animals out of my diet completely. I had watched a few documentaries and read a few books which got me more interested in eating a healthier, more whole foods based diet. So even though real ice cream was sometimes still on the menu for me, by the time my friend emailed me the recipe for vegan ice cream I was intrigued in exploring the alternatives to the traditional animal product-based dessert.
So what’s the one ingredient for vegan ice cream? Bananas! Very ripe bananas, to be exact. As most of us know, bananas tend to get sweeter as they ripen. This is because the starch begins to break down into sugar, which makes them the perfect natural ingredient for a sweet dessert like vegan ice cream. Lucky for us, the level of cancer-fighting antioxidants also increases in ripened bananas. So we can have a delicious plant-based dessert that’s also packed with healthful nutrients.
- 2 frozen overripe bananas
- Freeze your overripe bananas. Put your frozen banana chunks into a food process and pulse to chop. Then blend until completely smooth.
- This recipe works best with really ripe bananas. If they are not ripe enough they will not be as sweet and the finished product will probably not be as satisfying to anyone who is craving ice cream.
- Even though this recipe is for one-ingredient vegan ice cream, the possibilities for flavors are endless. You could add a variety of fruits like strawberries, coconut or even avocado. Nuts like walnuts or pecans or peanut butter are also great source of flavor and healthy fats. Cacao can be added to make a delicious chocolatey treat.
