Possibly because it’s one of my favorites dishes of the holiday season, stuffing always does exactly what it promises – stuffs. Since I stopped eating meat, my meals often consist of mostly side dishes. On Thanksgiving my main course is stuffing, which takes up at least half of my plate, while all of the other side dishes have to fight for a spot on the other half. Once you taste this stuffing you will understand m obsession.
Vegetarian Stuffing
Serves 8 normal people (or 3 of me)
Ingredients
- 1 box cube stuffing
- 1 box crumb stuffing
- 2-3 cups of vegetable broth
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced mushrooms
- 1/2 cup butter
- 2 cloves garlic
- 3 Tbsp. parsley
- 1 Tbsp. poultry seasoning
- 2 Tbsp sage
- 2 tsp. oregano
- Salt & pepper to taste
Combine diced veggies, garlic, butter and seasonings in a large covered skillet and simmer until tender. Place crumbs and cubes into a large mixing bowl. Add the cooked veggie mixture and stir well. Add broth a little at a time until the mixture is moist but not too mushy. Add additional seasonings to taste. Bake in a covered casserole dish at 350 degrees for 45-55 minutes.
