Ever have a craving for cinnamon rolls but don’t have, say, 2 frickin days to dedicate to making them?! Me, too. This morning I had that craving and I suddenly remembered something. When I was in college, I worked at bagel shop and one of the most popular things on the menu was the cinnamon sugar bagel. It was simple, but amazing! So I decided to recreate that with what I had in the fridge – a panini roll and earth balance.
This is ridiculously quick, easy and super delicious! And it’s versatile. You can use a roll, a slice of bread or a bagel. Spread a thin layer of earth balance.
Blend 2 tablespoons of sugar and a tsp of cinnamon together and top the rolls evenly with the mixture. You’ll want a decent layer so that it will melt and create a sweet, crispy crust.
Bake at 400 degrees for 5 minutes, or until the butter/sugar mixture starts to bubble. Let it cool for a couple minutes before eating, as it’s really hot. Seriously, the waiting is the hardest part of this recipe!
So it might be a stretch to call these cinnamon rolls but like I said, they’re easy, and they’re meant for lazy vegans! Enjoy!
