One-Pan Eggs with Peppers

As they say, breakfast is the most important meal of the day. On weekdays my breakfast is usually a green smoothie or oatmeal. When the weekend rolls around I sometimes use my extra time to prepare a more hearty meal for my fiance and I. This meal is super easy, pretty quick and really tasty.

One-Pan Eggs with Peppers

Makes 2 servings


  • 4 eggs
  • 1/2 white onion
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1 red chili pepper
  • 1 Tbsp. olive oil
  • salt & pepper to taste

Slice the onion and peppers thin. Heat oil in a large skillet and stir-fry the onions and peppers over medium until browned on the edges. Once caramelized, use a spatula to create four spaces in the veggie mixture and crack one egg in each space. Cover the skillet with a lid and let sit until the eggs are cooked through or until the egg whites are solid on the top.

Serve with heated tortillas.
