I’m not gonna lie – super bowl is one of the only sports games I watch all year. I’m not super into sports but I enjoy watching this one because everyone gets together and eats good food (and drinks good beer!) Last year was my first super bowl as a vegan and I made a huge plate of vegan nachos, piled high with taco tempeh, beans, cashew nacho cheese, tomatoes, scallions, olives…you get the picture. They were amazing! This year, I thought I’d share a couple of vegan super bowl recipes that I’m planning on preparing this Sunday. Enjoy!
Vegan BBQ Pulled “Pork” Jackfruit Sandwiches with Agave Mustard Slaw
There’s something about BBQ that is so satisfying when you’re hungry. My love of BBQ did not wane after going vegan, so I created these vegan BBW pulled pork style sandwiches to fill the craving! Perfect for pigging out during the game. Just make sure you have napkins nearby!
Stuffed Mushrooms
These are one of my all-time favorite appetizers(and sometimes entire meal). They’re super easy to make and are the perfect finger food for parties. Just make sure to prepare enough – these suckers go fast!
Cashew Nacho Cheese
Creamy, gooey cashew queso is always on the menu in our house on game day. You can use it as a dip for chips of course. We also like to pile some on, along with a bunch of veggie chili to make the best vegan chili cheese nachos!
Jackfruit Tacos
Tacos are the perfect compliment to any party. You can also use the jackfruit taco filling on top of nachos, along with some cashew nacho cheese. The possibilities are endless!
Mango Habanero Mustard
Ok, so you want something a little quicker to make and a little more snacky? I’ve got you covered! Try this sweet and spicy mustard with your favorite crackers or chips. The perfect blend of salty and a hint of sweetness to satisfy your munchies.
